This is my favorite granola recipe, simple and delicious! I almost always have a jar of this sitting on the counter and it has definitely become a staple in our family. I got this recipe years ago from my husbands (now my) aunt. I remember having it at the very first Christmas I spent with my husbands family. Family recipes are always extra delicious and I have now passed it on to my 3 year old Ella. She does all the pouring, mixing and tasting!
Ella's Granola:
*all quantities can be adjusted according to taste
4 cups organic old fashioned rolled oats
1 cup organic unsweetened coconut
1 cup pecans
1 cup sliced almonds
1/4 c Vermont maple syrup
1/4 oil (coconut, organic canola)
Mix all ingredients together in a large mixing bowl. Spread on a cookie sheet and bake at 275 for about 45-50 minutes. I stir every 15 minutes or so to make sure everything stays even. Let cool and enjoy!
