If you don't own a spiralizer, you are lacking an essential kitchen tool. I feel like I have wasted many years in the kitchen, missing out on some pretty awesome recipes. This is a life changing kitchen gadget! And the best part is I ordered mine on Amazon for less than $30, what a steal! I love how there are three different blade attachments, and the spiralizer suctions to your counter so it won't slide as your are working.
Every summer I get a ton of zucchini and get tired of the same old recipes. I just tried this zucchini salad recipe and it was absolutely delicious! And I am now convinced that kids will eat anything shaped like spaghetti, since Ella has never liked zucchini before. Both girls wolfed this down and asked for seconds.
Ingredients:
*1 large zucchini
*1 pint cherry tomatoes (roasted)
*4 scallions, sliced
*1 garlic scape, chopped
*1 Tbs olive oil
*1/4 c grapeseed oil
*juice from 1/2 lemon
*1 garlic glove, minced
*1/4 c toasted pine nuts
*salt and pepper to taste
1. Use spiralizer to make zucchini noodles and place in large bowl
2. Roast tomatoes tossed in olive oil in oven at 250 for about an hour
3. For dressing whisk together grapeseed oil, lemon juice, minced garlic, salt and pepper
4. Add dressing, roasted tomatoes, scallions and garlic scapes to zucchini noodles
5. Top with toasted pine nuts and salt and pepper to taste
