We recently visited one of our favorite local farm to table restaurants and had the most delicious salad. I decided to try and recreate it at home.. Here is what I came up with:
You will need:
4 oz pea shoots
4 oz microgreens or arugula
1 bunch asparagus (local if possible)
1/4-1/2 C peas (fresh if you have them, I used frozen)
1 block local feta cubed (you can use as much as you like) I use Maplebrook Farm
Dressing:
2 TBS olive oil
1 TBS fresh lemon juice
salt and pepper to taste
1. Place asparagus on baking sheet and drizzle with olive oil, salt and pepper. Roast at 400 degrees for about 15 minutes or until tender.
2. While asparagus roasts add the rest of the ingredients to a large bowl. Once the asparagus cools, slice into 1 inch pieces and add to salad.
3. Drizzle with dressing and ENJOY.
